Greek Essentials: Fava

Ah Fava… this is not to be confused with fava beans. This is actually a puree of split yellow peas and flavorings. In Greece this is commonly found on the mezedes or appetizer menu.

What you need:

  • 500g bag of yellow split peas
  • 1 large sweet onion
  • 1 clove of garlic
  • 2 bay leaves
  • Olive oil
  • Juice of 1 lemon
  • Salt and pepper

How it’s done:

  • Mince the onion and smash the garlic
  • In a medium sized pot fry the garlic and onion in a little olive oil until the onions are translucent
  • Add the split peas with a little more oil and stir for a few seconds
  • Add the bay leaves
  • Add enough water to completely cover
  • Bring to a boil, reduce heat and simmer for about 30-40 mins
  • When done strain off any excess liquid and reserve
  • Place fava in a blender and pulse until smooth, adjusting liquid if necessary
  • Add 1 tbsp of olive oil and lemon juice, blending in
  • Spread out in a serving platter or bowl and cool until it sets
  • Serve at room temperature with a loaf of crusty bread and a little olive oil
