Flavored Salts

Flavored salts are one of my favorite ways to impart an instant burst of flavor to any dish. Exotic yet very simple to prepare. All you need is your mortar and pestle and an appetite. I will show how to create a couple of my daily standbys.

Greek Salt:

This salt is truly Greek. I know that there are a lot of things out there with oregano and olives labeled as Greek, this is not one of those. The salt is a local sea, salt the lemons are from near Corinth. The olives are from Kalamata, and the oregano is from an old lady who I am sure picked it off the side of the road.

What you need:

  • Coarse sea salt (1 cup or so)
  • Zest of 1 lemon
  • 4 Kalamata olives pitted and rough chopped
  • A good handful of dried oregano

How it’s done:

  • Take your mortar and pestle and starting with half of the salt start adding ingredients as you grind
  • Once all your flavors are added start adding more salt until you get the desired consistency 
  • That’s it! this is great on fresh tomatoes 
Lemon Salt:

What you need:
  • Coarse sea salt (1 cup or so)
  • Zest of 2 or 3 lemons

How it’s done:

  • Same process as above
