Well here we are! The long awaited conclusion to my olive experiment. After 2 months or so brining the olives in the saltwater the time has come for the flavoring.
- 1 liter cooking oil (I used sunflower oil)
- Various spices (I used oregano, rosemary, chillies and a bit of coriander)
- 2 Lemons: rough chopped
- a large jar to hold the olives while they are being flavored
Place the olives in a large colander and wash thoroughly with fresh running water. Put the olives in your clean jar, adding all your flavors on top. Pour your oil over the top, adding just enough to fully cover the olives. Give a quick stir with a spoon and cover with a lid. After one month or so check the flavor and adjust as desired. That’s it, enjoy.
