Braised Beef with Summer Potatoes Done Two Ways

What started out as a craving for braised short ribs, soon evolved into the recipe below. To me, beef slowly braise in wine and butter is about as close to comfort food as it gets. When you add potatoes to the mix the result is dare I say magic?  Unfortunately you cannot get short ribs in Greece so to satisfy my craving I had to get creative…
To me late summer is about freshly dug potatoes. Crisp and fresh, bursting with flavours it is everything a tuber should be. So instead of just roasted potatoes, I decided to create a risotto to accompany as well, solely to accent the fresh clean flavours of the potatoes
